Carbon Steel with Beech Handle

Pretty much all the knife I find I ever need whilst out there. Awesome for everything from cutting salami at lunch time, to whitling at the campsite or even filleting a fish. I prefer the carbon steel over the stainless as it's easy as to get a razor sharp edge on, but it will need oiling often to prevent rusting. The simple locking system works really well and keeps it solid and safe, and I've even put a little lanyard through the handle so that it can be clipped to a harness.
